14 Dec PROTEIN CHRISTMAS DELIGHTS
Is it possible to enjoy the sweet treats without feeling any remorse? Hmmm, it makes my mouth water just thinking about my favourite Christmas candy: the coconut balls. I just can’t say ‘no’ when I see them on the table. And I can’t resist, as much as I would like, since my aunt, every year when December approaches, has already bought me several boxes. The traditions are to respect them.
However, it is when January arrives when I remember these little and diabolic sweetmeats. And it’s more difficult for me to forget them on the pull-up bar.
For those who have temptations and some sugary fetishism, I have found this way of cooking coconut balls in their fitness version: protein-enriched. You will see that it takes a very easy preparation but with a pretty showy finish. We can even use them for special occasions.
I personally love the coconut flavour they have and that texture when you bite them. And although it is considered a typical Christmas treat, it can also be made several times a year whenever we feel like coconut but taking protein at the same time. Also, they usually can be stored in good condition for a few days and this allows us to have them for breakfasts and snacks during several days. They are delicious both freshly baked and cold!
An ideal recipe for lovers of these sweets, but with the advantage of not adding sugars or using flour. They are not only gluten-free but also rich in vitamins and nutrients that nourish the skin, hair and provide energy to face this busy time with energy. Do not hesitate to try them and leave everyone amazed with these delights!
1 medium egg
40 g whipped cream cheese or quark 0%
50 g dehydrated grated coconut
40 g vanilla flavour protein (or whatever you want)
Optional: Half a grated lemon grind and / or a splash of liquid sweetener if your protein is not very sweet
-We heat up the oven to 190º.
For the occasion I used whey protein with vanilla flavour, therefore I have not used any type of flavouring. But if you want to go for an unflavoured protein (I personally like this one from MyProtein ) you can add a few drops of extract to enhance the flavour or lemon zest.
-In a bowl beat the egg a little and mix it with the whipped cream cheese, until you get a homogeneous dough. Then add the coconut and, finally, add the protein and mix again until everything is well mixed with the rest of the ingredients.
-With our wet hands we are going to make the balls and place them on the oven tray.
-Bake for 15 minutes.
-Finally, we take them out of the oven, let them cool down and Bon Appétit!
